दुनिया भर में भारत फल और सब्जियों का दूसरा सबसे बड़ा उत्पादक है। लेकिन, हमारे देश में जल्दी खराब होने वाले उत्पादों के प्रसंस्करण की सुविधा चीन, ब्राजील, मलेशिया, वियतनाम, जैसे विकसित या विकासशील देशों की तुलना में बहुत कम है। देश में फल और सब्जियों के प्रसंस्करण के विकास में प्रमुख बाधाएं कुशल आपूर्ति श्रृंखला एवं आधुनिक और उपयुक्त बुनियादी सुविधा का उपलब्ध न होना है। परिणामस्वरूप, देश में फल एवं सब्जियों की अत्यधिक बर्बादी हो रही है जिसके फलस्वरूप किसानों को उनकी उपज के लिए पर्याप्त पारिश्रमिक नहीं मिल रहा। आईसीएआर संस्थान के केन्द्रीय कटाई-उपरांत अभियांत्रिकी और प्रौद्योगिकी संस्थान, लुधियाना, द्वारा किए गए एक अध्ययन के अनुसार विभिन्न कृषि फसलों की 6-18% तक बर्बादी होती है जिनमें सबसे जादा बर्बादी फल और सब्जियों की होती है।

खाद्य प्रसंस्करण उद्योग मंत्रालय इस नुकसान में कमी लाने हेतु आपके विचार / सुझाव चाहता है।

The govt could built some store house. At least one in each block and selling system associated to them. I know, this is a bit expensive effort, but will solve a lot of problem. in this farmer can sell their products directly to the govt and get proper price. public also will get veg and fruit in proper price as there is no middle man involved and govt can have some profit also. not only this, govt can employ some people (may be the existing middle mans) to take care of the storage, selling the goods and transport. this may reduce some unemployment problem. also the companies who are doing the post processing could buy the raw materials whenever they want.

Like in TN, Farmer's market should be established in all towns/City and transportation/conservative rooms to be provided to them

Agricultural Department has to ensure no over production of any vegetables like Potato. In case of overproduction and lack of storage space, Railways should be allowed to carry the stocks in empty return rakes.
I always find that the rakes after unloading goods they go back empty to other destination, This empty movement of rake has to be utilized by carrying such vegetable for shorter distances.

More co-operatives should be formed on the lines of Amul to manage vegetable supply chain. Current process involves getting vegetables to WHolesale market and leads to further losses since the times involved to get it to end customer are more. The problem is not just of middlemen but also of the time taken by middlemen

As cities expand, the supply chain is getting further away from cities. This leads to more wastage in case of major cities. There should be special refrigerated bogies in trains which get supply from smaller places to larger cities. Eg: From Lasalgaon, Pandharpur to Mumbai - there are trains which are used by vegetable vendors but lack refrigerated bogies
That will reduce losses drastically

As a resident of W.B. when I see farmers are committing suicide for not getting the proper price due to over- production I can give a simple suggestion to export into the countries where there is scarcity for it like middle east. When I stayed at Iraq I saw potatoes are available only for two times in a year. In this era of net marketing and fast communication exporting should not be a stuff task both for the gov. or groups of individuals.Gov. should generate an authentic global food data bank.

Vegetables and fruits are shortlived. They can either be consumed or converted into a longer shelf life - cut/freeze for sale in supermarkets/abroad, vegetable juices, canned. Fruits can be processed similarly in addition to being jammed. Focus on creating healthy food options instead of the usual sugar loaded products.

The simple and best solution to cut down the post harvest losses, we first need to understand the number of layers between the farm and the fork. Cut down these middle men with a special emphasis on establishments like APMC, This is easier said than done but considering the fact that many private players are coming into the industry which would help achieve the above. The government needs to encourage these private players and improve on the transport facilities this itself would help reduce the
